Spicy Tomato Gazpacho
Great for Weeks 1 and 2
2 - 1 cup servings
This is the one recipe that always gets me through the Raw Smoothies week!
Ingredients
2 Medium Tomatoes, chopped
1/2 Red bell pepper, seeded and chopped
1/2 English cucumber, chopped
2 Tbsp Fresh lime juice, plus more to taste
2 Tbsp Cilantro, finely chopped, plus more to taste
1 Tbsp Red onion, finely chopped, plus more to taste
3/4 tsp Celtic sea salt, plus more to taste
1/8 tsp Fresh ground black pepper, plus more to taste
1 Pinch Red pepper flakes, plus more to taste
1 Tbsp Extra-virgin olive oil
1 tsp Jalapeno, finely chopped
1/4 tsp Lime zest, finely grated
1 Cup Ice cubes
1/2 Medium avocado, pitted and peeled (optional - as it will make the gazpacho more brown then red)
Directions
Throw everything into your blender and blast on high for 30 to 60 seconds until smooth and creamy.
Tweak cilantro, onion, chili and pepper flakes to taste.
