Raw Beet & Sweet Potato Salad with Creamy Garlic Lime Dressing

Ingredients

4 large sweet potatoes
3 - 4 beets
4 scallions
1/2 cup raw pumpkin seeds (pepitas)
Optional add-ins:
Sprouts
Slivered onions
Cubed Avocados

For the dressing (optional):
1/3 cup olive oil
zest of 1 lime
1/4 cup fresh lime juice (3 - 4 limes)
1 garlic clove, minced
2 Tbs. Raw Honey
1/4 cup cashews, soaked for 30 minutes
2 Tbs. water
1/2 tsp. salt
1/4 tsp. fresh ground black pepper

Alternatively, you can use the Simplest-Most-Diverse Salad Dressing recipe.

1. Peel the sweet potatoes and beets. Run each through a spiralizer or use a cheese grater to create long, thick shreds.

2. Mix the beets and sweet potato ribbons (or shreds) together in a large bowl.

3. Chop the tops (green parts) of the scallion on an angle to make large rings. Sprinkle the salad with the scallions and pepitas.

4. For the dressing, place all of the sauce ingredients in a blender and blend on high until smooth.

5. Pour dressing (if using) over the salad and toss until well coated and serve.
